4. Nutrient Absorption
There are many types of nutrients that require fat in order for the body to absorb them. Some of these nutrients that require fat in order to be absorbed by the body include carotenoid antioxidants.
Carotenoid antioxidants are pigments that are found in many types of plant foods. However, many of these plant foods, which are mostly fruits and vegetables, will typically have a low amount of fat. One study that was done has shown that adding in some avocado oil to a salad that contains romaine lettuce, carrots, and spinach, can increase the carotenoid absorption.
The increase in absorption was quite substantial at 4.3 when compared to a salad that did not contain any fat. For this reason, when you are eating a salad it is important to make sure that you add in a healthy source of fat such as avocado oil in order to increase the carotenoid antioxidant absorption.
