4. Canning Fruits and Vegetables
Many people are put off from eating canned food because of the metallic taste of these foods. In addition, they seldom taste fresh but often “taste like the can.” Some feel the answer is to can their own fruits and vegetables, especially if they grow their own food. What might result is a slightly muted metallic taste compared to store-bought canned food, even if one uses glass jars.
The metallic taste is not just from the actual can, but from the minerals in the tap water used when canning the fruits and vegetables. If you don’t use distilled water during the canning process, the minerals from the water are absorbed into the food over a long period of time. In addition, the color of food is also affected. The food becomes tougher and the nutrients in the food aren’t absorbed as readily. Therefore, always use distilled water while canning.
